Description

These Foil Pack Baked Nachos are a quick and easy meal perfect for a family dinner or casual get-together. Ground beef seasoned with taco spices and layered with Mexican blend cheese in individual foil packets is baked to melty perfection, then topped with fresh avocado, tomato, cilantro, chives, and sour cream for a customizable and flavorful nacho experience without the mess.

Beef Mixture

  • 4 Tbsp taco seasoning (or 1 packet)

Nacho Assembly

  • 4 sheets Aluminum Foil (16″ each sheet)

  • 8 oz Mexican blend cheese (divided into four ¼ cup portions)

Instructions

  1. Brown the Beef: Preheat the oven to 350˚F. In a large skillet over medium heat, brown the lean ground beef until no pink remains. Add 4 Tbsp taco seasoning and ½ cup water to the beef, then cook for an additional 3-5 minutes, stirring occasionally to combine the flavors.
  2. Assemble the Foil Packs: Tear off four 16-inch sheets of aluminum foil. Place a handful of tortilla chips in the center of each sheet. Top with a heaping ¼ cup of Mexican blend cheese, then evenly divide the ground beef mixture over the cheese. Add another ¼ cup of cheese on top. Fold the long ends of the foil up and double-fold to seal loosely, allowing air to circulate. Then fold the short ends up and double-fold to close the foil packets securely.
  3. Bake the Nachos: Place the sealed foil packets on a baking sheet. Bake in the preheated oven at 350ËšF for 10 minutes until the cheese is fully melted and the nachos are hot throughout.
  4. Add Toppings and Serve: While the nachos bake, prep your toppings by chopping avocado, dicing tomato, and chopping cilantro and green onions.
