Instructions

  1. In a large bowl, whisk together the dry ingredients: all-purpose flour, baking powder, salt, and sugar.
  2. In a separate bowl, combine the wet ingredients: milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir gently just until combined; do not overmix. The batter should be thick and slightly lumpy.
  4. Let the batter rest for 5–10 minutes while preheating a nonstick skillet or griddle over medium heat.
  5. Lightly grease the skillet with butter or oil.
  6. Pour 1/4 cup of batter per pancake onto the skillet.
  7. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set.
  8. Flip and cook for another 1–2 minutes until golden brown and cooked through.
  9. Repeat with the remaining batter.
  10. Serve warm with maple syrup, butter, or your favorite toppings.
