Description

This Flourless Banana Bread is a moist, naturally sweetened treat made without any flour, perfect for those avoiding gluten or seeking a nutritious twist on a classic comfort food. Using ripe bananas, almond butter, and optional chocolate chips, this easy-to-make bread is wholesome and packed with flavor, ideal for breakfast, snack, or dessert.

Ingredients

Scale

Banana Bread Ingredients

  • 3 ripe bananas (plus 1 extra for topping)
  • 3 large eggs
  • 1 cup (250g) almond butter (or peanut butter)
  • 1/4 cup (60ml) honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt
  • 1/2 cup (85g) chocolate chips (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper to ensure the bread doesn’t stick.
  2. Mash Bananas: In a large bowl, mash the 3 ripe bananas thoroughly until smooth, creating the natural base and sweetness for the bread.
  3. Combine Wet Ingredients: Add the eggs, almond butter, honey or maple syrup, and vanilla extract to the mashed bananas. Whisk everything together until the mixture is smooth and well combined.
  4. Add Dry Ingredients: Stir in the baking soda, optional cinnamon, and a pinch of salt. Mix carefully so that the leavening agent is evenly distributed for proper rising.
  5. Fold in Chocolate Chips: If you want a chocolatey addition, gently fold the chocolate chips into the batter, making sure they’re evenly spread without overmixing.
  6. Prepare to Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula for even baking.
  7. Decorate with Banana: Slice the extra banana lengthwise and place the slices on top of the batter for a pretty decorative finish that also adds extra flavor.
  8. Bake: Bake in the preheated oven for 50 to 60 minutes. To check doneness, insert a toothpick into the center; it should come out clean or with a few moist crumbs.
  9. Cool: Let the bread cool in the pan for 10 minutes to set, then transfer it to a wire rack to cool completely before slicing and serving.

Notes

  • You can substitute almond butter with peanut butter or other nut butters as preferred.
  • The honey or maple syrup adds natural sweetness, so adjust to taste if you prefer it less sweet.
  • Using very ripe bananas improves sweetness and moisture in the bread.
  • For a vegan version, substitute eggs with flax eggs or other plant-based egg replacers, though texture will vary.
  • Chocolate chips are optional but add a delicious contrast; dark chocolate chips will reduce overall sugar content.
  • Make sure not to overbake to keep the bread moist and tender.
