This Fiesta Lime Chicken Copycat recipe is a delicious Tex-Mex inspired dish featuring grilled chicken topped with a zesty Mexi-Ranch sauce and gooey melted cheese. Serve it over Mexican rice for a flavorful and satisfying meal.
Ingredients
Chicken Marinade:
- 4 boneless, skinless chicken breasts
- ¼ cup lime juice
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 2 tablespoons tequila (optional)
- 1 tablespoon honey
- 2 garlic cloves, minced
- ½ teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
Mexi-Ranch Sauce:
- ½ cup ranch dressing
- ¼ cup salsa
- 1 tablespoon lime juice
- 1 teaspoon taco seasoning
For Serving:
- 2 cups cooked Mexican rice
- 1 cup tortilla strips or crushed tortilla chips
- Fresh chopped cilantro (optional)
Instructions
- Marinate the Chicken: In a medium bowl, combine lime juice, soy sauce, Worcestershire sauce, tequila, honey, garlic, cumin, chili powder, paprika, and black pepper. Marinate chicken for at least 1 hour.
- Grill the Chicken: Grill marinated chicken for 5–7 minutes per side until fully cooked.
- Prepare Mexi-Ranch Sauce: Mix ranch dressing, salsa, lime juice, and taco seasoning in a bowl.
- Top & Broil: Place grilled chicken on a baking sheet, top with Mexi-Ranch sauce and cheeses. Broil until cheese melts.
- Serve: Serve chicken over Mexican rice, garnish with tortilla strips and cilantro.
Notes
- You can substitute tequila with extra lime juice.
- Store-bought Southwest or chipotle ranch dressing can be used as a shortcut.
