Instructions
- Prepare the rice: Cook 2 cups of jasmine rice and let it cool completely, preferably overnight, to achieve the best texture for frying.
- Scramble the eggs: Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Crack in the 2 eggs and scramble them until fully cooked. Remove from the skillet and set aside.
- Cook the vegetables: Add the remaining tablespoon of vegetable oil to the skillet. Stir-fry the diced carrots for 2-3 minutes until they start to soften. Then add the green peas and cook for an additional 2 minutes.
