Description

A quick and flavorful egg fried rice recipe that combines fluffy jasmine rice with scrambled eggs, fresh vegetables, and savory seasonings for a perfect weeknight meal.

Ingredients

Scale

Main Ingredients

  • 2 cups day-old cooked Jasmine Rice
  • 2 large Eggs
  • 1 cup fresh or frozen Green Peas
  • 1 cup diced Carrots
  • 3 chopped Green Onions

Seasonings and Oils

  • 3 tablespoons Soy Sauce
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Vegetable Oil
  • 1/2 teaspoon Black Pepper

Instructions

  1. Prepare the rice: Cook 2 cups of jasmine rice and let it cool completely, preferably overnight, to achieve the best texture for frying.
  2. Scramble the eggs: Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Crack in the 2 eggs and scramble them until fully cooked. Remove from the skillet and set aside.
  3. Cook the vegetables: Add the remaining tablespoon of vegetable oil to the skillet. Stir-fry the diced carrots for 2-3 minutes until they start to soften. Then add the green peas and cook for an additional 2 minutes.
  4. Fry the rice: Increase the heat to medium-high and add the cooled jasmine rice to the skillet. Stir well and cook for 3-4 minutes, allowing the rice to get slightly crispy.
  5. Combine and season: Add soy sauce, sesame oil, and black pepper to the rice mixture. Mix in the scrambled eggs and chopped green onions. Cook everything together for another 1-2 minutes until heated through and well combined.

Notes

  • Using day-old rice is crucial to prevent sogginess and get the perfect fried rice texture.
  • Feel free to customize by adding other vegetables like bell peppers or corn.
  • Adjust soy sauce quantity to taste for saltiness control.
  • For a spicier version, add some chili flakes or Sriracha sauce.
  • Use sesame oil sparingly to enhance flavor without overpowering the dish.
