Ingredients
Tofu
- 400 grams (14 oz) firm tofu, cubed
Vegetables
- 2 medium bell peppers (1 red, 1 yellow), sliced
- 1 cup broccoli florets
- 2 medium carrots, julienned
- 2 green onions, chopped (for garnish)
Sauce and Seasoning
- 4 tablespoons soy sauce
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons sesame oil
- 1 tablespoon olive oil (for cooking)
- Salt and pepper to taste
Instructions
- Prepare the tofu: Drain and press the tofu between paper towels to remove excess moisture, then cut into 1-inch cubes.
- Chop the vegetables: Slice the bell peppers, cut the broccoli into florets, and julienne the carrots to prepare them for stir-frying.
- Cook the tofu: Heat olive oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook for 5-7 minutes until golden brown and crispy on all sides. Remove tofu from skillet and set aside.
- Sauté aromatics and vegetables: In the same skillet, add sesame oil, garlic, and ginger. Sauté for 30 seconds until fragrant. Then add the prepared vegetables and stir-fry for 5-7 minutes until tender-crisp.
- Combine tofu and sauce: Return the crispy tofu to the skillet, add soy sauce, and season with salt and pepper to taste. Cook everything together for an additional 2-3 minutes to blend flavors.
- Serve: Serve the vegetable tofu stir fry warm, garnished with chopped green onions. Enjoy it over steamed rice or noodles for a complete meal.
