Description

A quick and easy vegetable tofu stir fry packed with colorful bell peppers, broccoli, and carrots, tossed in a savory soy-ginger sauce. Perfect for a healthy vegan weeknight dinner, this recipe features crispy tofu and fresh vegetables stir-fried to tender-crisp perfection.

Ingredients

Scale

Tofu

  • 400 grams (14 oz) firm tofu, cubed

Vegetables

  • 2 medium bell peppers (1 red, 1 yellow), sliced
  • 1 cup broccoli florets
  • 2 medium carrots, julienned
  • 2 green onions, chopped (for garnish)

Sauce and Seasoning

  • 4 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons sesame oil
  • 1 tablespoon olive oil (for cooking)
  • Salt and pepper to taste

Instructions

  1. Prepare the tofu: Drain and press the tofu between paper towels to remove excess moisture, then cut into 1-inch cubes.
  2. Chop the vegetables: Slice the bell peppers, cut the broccoli into florets, and julienne the carrots to prepare them for stir-frying.
  3. Cook the tofu: Heat olive oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook for 5-7 minutes until golden brown and crispy on all sides. Remove tofu from skillet and set aside.
  4. Sauté aromatics and vegetables: In the same skillet, add sesame oil, garlic, and ginger. Sauté for 30 seconds until fragrant. Then add the prepared vegetables and stir-fry for 5-7 minutes until tender-crisp.
  5. Combine tofu and sauce: Return the crispy tofu to the skillet, add soy sauce, and season with salt and pepper to taste. Cook everything together for an additional 2-3 minutes to blend flavors.
  6. Serve: Serve the vegetable tofu stir fry warm, garnished with chopped green onions. Enjoy it over steamed rice or noodles for a complete meal.

Notes

  • Pressing the tofu is essential for achieving a crispy texture.
  • You can substitute the vegetables with your favorites or what’s in season.
  • Adjust soy sauce quantity to taste, especially if you prefer lower sodium.
  • Serve immediately for best texture; leftovers can be refrigerated for up to 2 days.
  • For extra heat, add a pinch of red pepper flakes during the vegetable stir-fry stage.
