This Easy Hobo Casserole is a comforting one-dish meal that combines ground beef, potatoes, creamy mushroom soup, and cheddar cheese for a hearty and delicious dinner option.
Ingredients
Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon olive oil
Other Ingredients:
- 2 cups frozen or canned sliced potatoes, drained if canned
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/4 cup chopped parsley (optional for garnish)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Cook Ground Beef: In a skillet over medium heat, cook the ground beef and onion in olive oil until browned. Season with garlic powder, paprika, salt, and pepper. Drain excess fat.
- Prepare Soup Mixture: In a bowl, whisk together cream of mushroom soup and milk until smooth.
- Layer Ingredients: Grease a 9×13-inch baking dish. Layer potatoes, beef mixture, and soup mixture in the dish.
- Bake: Cover the dish with foil and bake for 35 minutes. Remove foil, add cheddar cheese on top, and bake uncovered for 10–15 minutes until cheese is melted and bubbly.
- Serve: Let it sit for 5 minutes before serving. Garnish with parsley if desired.
Notes
- You can substitute ground turkey or sausage for the beef.
- For extra flavor, consider adding sautéed mushrooms or green bell peppers.
