Description

This Easy Hobo Casserole is a comforting one-dish meal that combines ground beef, potatoes, creamy mushroom soup, and cheddar cheese for a hearty and delicious dinner option.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Other Ingredients:

  • 2 cups frozen or canned sliced potatoes, drained if canned
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped parsley (optional for garnish)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook Ground Beef: In a skillet over medium heat, cook the ground beef and onion in olive oil until browned. Season with garlic powder, paprika, salt, and pepper. Drain excess fat.
  3. Prepare Soup Mixture: In a bowl, whisk together cream of mushroom soup and milk until smooth.
  4. Layer Ingredients: Grease a 9×13-inch baking dish. Layer potatoes, beef mixture, and soup mixture in the dish.
  5. Bake: Cover the dish with foil and bake for 35 minutes. Remove foil, add cheddar cheese on top, and bake uncovered for 10–15 minutes until cheese is melted and bubbly.
  6. Serve: Let it sit for 5 minutes before serving. Garnish with parsley if desired.
