Ingredients
For the Casserole:
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can chili beans (undrained)
- 1 (10 oz) can Rotel (diced tomatoes with green chiles)
- 1 (1 oz) packet taco seasoning
- 2 cups shredded cheddar cheese
- 4 cups Fritos corn chips (plus more for topping)
For Garnish:
- Chopped green onions
- Sour cream (optional)
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook Beef Mixture: In a skillet, cook ground beef and onion in olive oil until browned. Add garlic, chili beans, Rotel, and taco seasoning. Simmer for 5 minutes.
- Layer Casserole: Spread 3 cups of Fritos in the baking dish. Top with beef mixture and cheddar cheese.
