Ingredients

- pastel-colored sanding sugar or icing for decorating
Instructions
- Preheat the Oven: Preheat the oven to 350°F and line baking sheets with parchment paper.
- Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- Mix Wet Ingredients: In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract if using.
- Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Shape and Bake: Roll the dough into 1-inch balls or roll out and cut with Easter-themed cookie cutters. Place on the prepared baking sheets about 2 inches apart. Sprinkle with sanding sugar if desired. Bake for 8–10 minutes until lightly golden.
