Description

This delightful Easter Bunny Dish features tender boneless chicken thighs baked inside a flaky puff pastry filled with a savory mixture of fresh spinach, feta cheese, and cherry tomatoes. Perfect for a festive occasion, this savory pastry combines rich flavors and charming presentation to impress your guests.

Ingredients

Scale

Chicken and Filling

  • 1 lb boneless chicken thighs
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste

Puff Pastry

  • 1 package (17.3 oz) puff pastry sheets
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the filling: In a mixing bowl, combine the chopped fresh spinach, crumbled feta cheese, and halved cherry tomatoes. Season the mixture with salt and pepper to enhance the flavors.
  3. Shape the pastry: Roll out the puff pastry on a lightly floured surface into an oval shape. Spoon the prepared spinach and cheese filling onto one half of the pastry. Fold the other half over to enclose the filling, creating a sealed pocket.
  4. Create the bunny features: Using leftover puff pastry scraps, cut out shapes to resemble ears and feet. Attach these decorative pieces carefully onto the pastry bunny using beaten egg as glue to help them stick during baking.
  5. Apply egg wash: Brush the entire surface of the assembled bunny with beaten egg wash. This will give the pastry a beautiful golden-brown and shiny finish once baked.
  6. Bake: Place the bunny on the prepared baking sheet and bake in the preheated oven for 25-30 minutes or until the puff pastry is puffed and golden brown, and the chicken inside is fully cooked. Serve warm for best taste.

Notes

  • You can substitute chicken thighs with chicken breasts if preferred, but thighs remain juicier.
  • Make sure to seal the edges of the puff pastry well to prevent filling leakage during baking.
  • To make cleaning easier, line your baking sheet with parchment paper or a silicone baking mat.
  • Allow the baked pastry to rest for a few minutes before serving to let the filling set.
  • For a vegetarian version, omit the chicken and increase the spinach and tomato filling or add mushrooms.
