Ingredients
Flatbread Batter
- 1 cup Cottage Cheese (Ensure it’s not too watery)
- 2 large Eggs (Serves as a binder)
- 1 pinch Salt (Optional for a true 2-ingredient flatbread)
- To taste Herbs/Spices (e.g., oregano or thyme for added flavor)
Instructions
- Blend Ingredients: Blend the cottage cheese and eggs in a blender or food processor until the mixture is smooth and lump-free, creating the flatbread batter.
- Preheat Skillet: Heat a nonstick skillet over medium heat for 2-3 minutes. Add a small amount of oil if necessary to prevent sticking.
- Cook First Side: Pour approximately 1/3 cup of the batter into the skillet and spread into a circle about 1/4 inch thick. Cook for 3-4 minutes until the edges start to lift and the bottom is golden brown.
- Flip and Cook Other Side: Carefully flip the flatbread using a spatula and cook the other side for another 2-3 minutes until golden brown and puffed up.
- Cool and Repeat: Transfer the cooked flatbread to a wire rack or plate to cool slightly. Repeat the process with the remaining batter.
- Serve: Serve the flatbreads warm, topped with your favorite herbs, spices, or other toppings for added flavor. Enjoy!
Notes
- For best results, use cottage cheese that is not too watery to prevent the batter from being too runny.
- You can omit salt for a pure 2-ingredient version consisting only of cottage cheese and eggs.
- Add herbs like oregano or thyme to enhance the flavor profile of the flatbread.
- Use a nonstick skillet to avoid sticking and to get a nice golden crust.
- This flatbread is best enjoyed fresh but can be stored in the fridge for up to 2 days and reheated in a pan.
