Ingredients

Scale

Cake

  • 200 grams (1 cup) pitted dates, chopped
  • 240 ml (1 cup) boiling water
  • 120 ml (1/2 cup) honey
  • 120 ml (1/2 cup) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 200 grams (1 1/2 cups) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Spiced Syrup

  • 120 ml (1/2 cup) honey
  • 60 ml (1/4 cup) water
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat and prepare pan: Preheat your oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper to ensure the cake doesn’t stick and bakes evenly.
  2. Soak dates: In a bowl, combine chopped dates with boiling water. Let soak for about 10 minutes until the dates soften fully. Then, mash the dates slightly with a fork to distribute their sweetness throughout the cake batter.
  3. Mix wet ingredients: In a large bowl, whisk together honey, vegetable oil, eggs, and vanilla extract until well combined. Stir in the mashed dates along with the soaking liquid to infuse moisture and flavor into the cake batter.
  4. Combine dry ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, cinnamon, nutmeg, ginger, and salt to distribute the leavening agent and spices evenly.
  5. Mix batter: Gradually add the dry ingredients to the wet mixture, stirring gently and just until combined. It’s okay if the batter has a few lumps; overmixing can make the cake tough.
  6. Bake the cake: Pour the batter into the prepared pan, smoothing the top. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. Prepare spiced syrup: While the cake cools, combine honey, water, cinnamon, ginger, nutmeg, and a pinch of salt in a small saucepan. Simmer over medium heat, stirring until the honey dissolves. Continue simmering for about 5 minutes until slightly thickened. Remove from heat and let cool.
  8. Apply spiced syrup: Place the cooled cake on a serving plate and drizzle the spiced syrup generously over the top. Allow it to soak into the cake for a few minutes to infuse extra flavor and moisture.
  9. Serve: Slice the cake and serve warm or at room temperature. Optionally, offer extra spiced syrup on the side for more sweetness.

Notes

  • Use pitted and chopped dates for easier soaking and blending into the batter.
  • Do not overmix the batter to keep the cake tender and moist.
  • The spiced syrup can be prepared ahead and stored in the refrigerator for up to 3 days.
  • Serve the cake slightly warm for the best texture and flavor absorption of the syrup.
  • Substitute vegetable oil with melted coconut oil for a subtle flavor variation.
