Salmon Bites

Bang Bang Sauce
- 1/2 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust to taste)
- 1 tsp honey
Instructions
- Preheat the oven or oil: Preheat your oven to 400°F (200°C). Alternatively, if you prefer frying, heat oil in a pan to medium-high heat for frying the salmon bites.
- Season the salmon: Lightly season the bite-sized salmon cubes with salt and pepper to enhance their natural flavor.
- Coat the salmon: Dredge the salmon cubes first in cornstarch, then dip them into the beaten eggs, and finally coat evenly in panko breadcrumbs to create a crispy crust.
- Cook the salmon bites: Arrange the coated salmon pieces on a baking sheet lined with parchment paper or a silicone mat. Bake for 12-15 minutes until golden and crispy. If frying, cook the salmon bites in hot oil until they turn golden brown and crispy on all sides, about 3-4 minutes per batch.
- Prepare the bang bang sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and honey. Mix until smooth and well blended to create the signature bang bang sauce.
- Toss and serve: Once the salmon bites are cooked and crisp, toss them gently in the bang bang sauce to coat evenly. Serve immediately for the best texture and flavor.
