  • 500g / 1 lb jumbo prawns/shrimp, peeled and deveined

  • 1/2 tsp salt

  2. Reduce Wine Butter: Pour the white wine and half of the melted butter into a 9 x 13 inch (22 x 33 cm) baking pan. Place the pan in the oven for 10 minutes to allow the liquid to reduce slightly, intensifying the flavors.
  3. Toss Shrimp: In a bowl, mix the prawns with the remaining melted butter, minced garlic, lemon juice, salt, and pepper. The butter may harden during this process; this is normal and won’t affect the flavor.
  4. Prepare Topping: Combine the panko breadcrumbs, Parmesan cheese, salt, and olive oil in a separate bowl to create the crunchy topping.
  5. Arrange Shrimp: Carefully remove the baking pan from the oven. Place the tossed prawns into the pan in a single but snug layer, ensuring even coverage.
