Shrimp and Sauce
- 500g / 1 lb jumbo prawns/shrimp, peeled and deveined
- 3/4 cup dry white wine (or substitute with chicken broth)
- 75g / 5 tbsp unsalted butter, melted
- 2 tbsp lemon juice
- 3 garlic cloves, minced
- 1/2 tsp salt
- 1/4 tsp pepper

- 3/4 cup panko breadcrumbs
- 1/4 cup Parmesan cheese, finely shredded
- 1/4 tsp salt
- 1.5 tbsp olive oil

Instructions
- Preheat Oven: Set your oven to 220°C / 430°F, suitable for all oven types, to ensure it’s hot enough for baking and broiling.
- Reduce Wine Butter: Pour the white wine and half of the melted butter into a 9 x 13 inch (22 x 33 cm) baking pan. Place the pan in the oven for 10 minutes to allow the liquid to reduce slightly, intensifying the flavors.
- Toss Shrimp: In a bowl, mix the prawns with the remaining melted butter, minced garlic, lemon juice, salt, and pepper. The butter may harden during this process; this is normal and won’t affect the flavor.
- Prepare Topping: Combine the panko breadcrumbs, Parmesan cheese, salt, and olive oil in a separate bowl to create the crunchy topping.
