Ingredients
Potatoes
- 4 medium russet potatoes (1 1/2 to 2 lbs), scrubbed and rinsed
Seasoning and Coating
- 1/4 cup extra virgin olive oil

- 1/4 tsp black pepper
- 1/4 tsp garlic powder

- 2 Tbsp parsley, finely chopped

Instructions
- Prep the Potatoes: Preheat the oven to 450ËšF. Line a rimmed baking sheet with foil or parchment paper. Cut potatoes into wedges by first slicing each potato in half lengthwise, then cutting each half into 4-5 wedges about 1/2 inch thick. Place the wedges in a bowl of cold water with 2 cups of ice cubes and let them soak for 30 minutes. After soaking, drain the potatoes well and pat them thoroughly dry with a tea towel or paper towels, then transfer to a large dry mixing bowl.
- Season the Potatoes: Add salt, paprika, black pepper, and garlic powder to the potatoes. Toss well to evenly coat all wedges. Drizzle the 1/4 cup of olive oil over the potatoes and toss again to ensure they are all coated in oil.
- Bake the Potatoes: Arrange the wedges on the prepared baking sheet in a single layer with the cut side down. Bake in the preheated oven at 450ËšF for 20 minutes. After 20 minutes, flip the wedges over and continue baking for an additional 12-15 minutes or until the wedges are crisp on the outside and tender on the inside.
- Add Toppings and Serve: Once baked, transfer the hot potato wedges to a mixing bowl. Sprinkle them with grated parmesan cheese and finely chopped parsley. Toss gently to combine and distribute the toppings evenly. Serve immediately with your favorite dipping sauce.
