Ingredients
Soup:
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups low-sodium chicken broth
- 2 cups shredded cooked chicken
- 8 lasagna noodles, broken into pieces
- 1 cup heavy cream
- 1 cup whole milk
- 4 ounces cream cheese, softened and cubed
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil: In a large pot over medium heat, sauté onion until translucent.

- Add broth and chicken: Pour in chicken broth, add chicken and noodles, simmer until noodles are tender.
