Ingredients
Pasta and Vegetables
- 8 oz pasta
- 1 tbsp olive oil
- 1 cup mushrooms, sliced
- 2 cups spinach
Sauce
- 1/2 cup heavy cream
- 1/4 cup parmesan cheese
- 1/4 tsp garlic powder
- Salt and pepper, to taste
Instructions
- Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain the pasta well and set it aside for later.
- Sauté the Vegetables: Heat the olive oil in a pan over medium heat. Add the sliced mushrooms and sauté them until they become soft and golden, about 4 to 5 minutes.
- Add Spinach: Add the fresh spinach to the pan with the mushrooms. Cook until the spinach wilts, approximately 2 to 3 minutes, stirring occasionally.
- Prepare the Sauce: Pour in the heavy cream, then add garlic powder, parmesan cheese, salt, and pepper. Stir continuously and cook the mixture for 2 to 3 minutes until the sauce thickens and becomes creamy.
- Combine: Add the cooked pasta to the pan and toss well to ensure the pasta is evenly coated with the creamy parmesan sauce. Serve immediately for best flavor and texture.
Notes
- For a lighter version, substitute heavy cream with half-and-half or whole milk, but the sauce will be less thick and creamy.
- Use freshly grated parmesan cheese for the best flavor and smooth sauce texture.
- Add crushed red pepper flakes for a spicy kick if desired.
- To make it gluten-free, use gluten-free pasta.
- This dish can be enhanced with cooked chicken or shrimp for added protein.
