Ingredients
Chicken and Marinade
- 1 lb chicken breast, boneless and skinless
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Bowl Components
- 1 cup cooked white or brown rice
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels, canned or frozen
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1 avocado, diced
- 1/4 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
Instructions
- Marinate the Chicken: In a medium bowl, combine olive oil, chili powder, ground cumin, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken breasts and coat them thoroughly with the spice mixture. Allow the chicken to marinate for 15 to 30 minutes to absorb the flavors.
- Cook the Chicken: Preheat a grill or skillet over medium-high heat. Grill or sear the marinated chicken breasts for 6 to 8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. Remove from heat and let it rest for a few minutes before slicing.
- Prepare the Sides: While the chicken cooks, warm the cooked rice if necessary. Heat the black beans and corn in a small pot on the stovetop or in the microwave until heated through.
- Assemble the Burrito Bowls: Divide the warmed rice evenly among four bowls. Top each with sliced grilled chicken, black beans, corn, diced tomatoes, and shredded cheese.
- Add Fresh Toppings: Top each bowl with diced avocado and a dollop of sour cream for creaminess.
- Garnish and Serve: Sprinkle fresh chopped cilantro over each bowl and serve with lime wedges on the side to squeeze over the contents for an added zesty brightness.
- Enjoy: Dig in to your delicious homemade Chicken Burrito Bowl!
