Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, whisk together the pumpkin purée, 2 eggs, vegetable oil, granulated sugar, light brown sugar, milk, and vanilla extract until the mixture is smooth and well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, pumpkin pie spice, ground cinnamon, and salt to evenly distribute the leavening and spices.
  4. Incorporate Dry into Wet: Gradually add the dry ingredients into the wet ingredients, stirring gently just until combined to avoid overmixing which can toughen the bread.
