Description

These Cranberry Gingerbread Energy Bites are a delicious and nutritious snack perfect for a quick energy boost. Combining the sweetness of dried dates and figs with tart dried cranberries, warm gingerbread spices, and crunchy almonds, these no-bake bites offer a wholesome treat that’s easy to prepare and ideal for on-the-go snacking or a healthy dessert.

Ingredients

Scale

Dry Fruits & Nuts

  • 3/4 cup dried dates
  • 1/2 cup dried figs
  • 1/2 cup dried cranberries
  • 1 cup almonds

Pantry Ingredients

  • 1/2 cup rolled oats (use certified gluten free if necessary)
  • 1 tablespoon molasses
  • 1 teaspoon gingerbread spice
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Chop: Add all ingredients to a powerful food processor and process continuously for about 5 minutes until the mixture becomes smooth and resembles a grainy, chocolate cookie dough texture.
  2. Tip: To prevent overheating, pause the processor every minute or so to scrape down the sides. If your processor struggles, pulse small amounts of ingredients at a time, gradually adding more until fully incorporated.
  3. Shape: Roll the mixture into small bite-sized balls. Store the energy bites in the refrigerator or freezer to keep them fresh and firm.

Notes

  • Use certified gluten-free oats if you require a gluten-free version.
  • These bites can be stored in the fridge for up to 2 weeks or in the freezer for up to 3 months.
  • Adjust the size of the bites according to your preference; smaller bites make great snack portions for children.
  • Substitute almonds with other nuts like walnuts or cashews if desired.
  • For extra flavor, add a pinch of ground nutmeg or cloves along with the gingerbread spice.
