Ingredients
Dry Fruits & Nuts
- 3/4 cup dried dates
- 1/2 cup dried figs
- 1/2 cup dried cranberries
- 1 cup almonds
Pantry Ingredients
- 1/2 cup rolled oats (use certified gluten free if necessary)
- 1 tablespoon molasses
- 1 teaspoon gingerbread spice
- 1/4 teaspoon ground cinnamon
Instructions
- Chop: Add all ingredients to a powerful food processor and process continuously for about 5 minutes until the mixture becomes smooth and resembles a grainy, chocolate cookie dough texture.
- Tip: To prevent overheating, pause the processor every minute or so to scrape down the sides. If your processor struggles, pulse small amounts of ingredients at a time, gradually adding more until fully incorporated.
- Shape: Roll the mixture into small bite-sized balls. Store the energy bites in the refrigerator or freezer to keep them fresh and firm.
Notes
- Use certified gluten-free oats if you require a gluten-free version.
- These bites can be stored in the fridge for up to 2 weeks or in the freezer for up to 3 months.
- Adjust the size of the bites according to your preference; smaller bites make great snack portions for children.
- Substitute almonds with other nuts like walnuts or cashews if desired.
- For extra flavor, add a pinch of ground nutmeg or cloves along with the gingerbread spice.
