Description

This hearty Cowboy Casserole combines ground beef, creamy mushroom soup, sour cream, corn, diced tomatoes with green chilies, cheddar cheese, and crispy tater tots into a satisfying baked dish perfect for family dinners.

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the casserole later.
  2. Cook Ground Beef and Vegetables: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon as it cooks. Add the diced onion and minced garlic and continue cooking until the onion softens, about 3–4 minutes. Drain any excess fat to keep the dish from being greasy.
  3. Combine Ingredients: Stir in the cream of mushroom soup, sour cream, milk, drained corn, and diced tomatoes with green chilies into the beef mixture. Mix well until combined and heated through. Season with salt and pepper according to your taste.
  4. Assemble in Baking Dish: Transfer the beef mixture into a 9×13-inch baking dish, spreading it out evenly. Sprinkle 1 1/2 cups of shredded cheddar cheese over the top. Arrange frozen tater tots in a single layer evenly across the cheese.
  5. Bake Casserole: Place the baking dish in the preheated oven and bake for 35–40 minutes or until the tater tots are golden brown and crispy.
  6. Add Remaining Cheese: Take the casserole out of the oven, sprinkle the remaining 1/2 cup of cheddar cheese on top, and bake for an additional 5 minutes until the cheese melts completely.
