  1. Slice Corn Off the Cob: Place a small bowl upside down inside a larger bowl to stabilize the corn. Hold the corn cob at an angle and carefully slice the kernels off into the large bowl, leaving the kernels contained for easy mixing.
  2. Add Cheese and Herbs: To the bowl with corn kernels, add the crumbled feta cheese, chopped parsley, sliced jalapeño, and chopped mint. Toss gently to evenly combine all ingredients.
  3. Dress the Salad: Drizzle the olive oil over the salad, sprinkle the flaky sea salt, and squeeze the lime juice on top. Stir gently to distribute the dressing and seasonings. Serve immediately for best freshness and flavor.
