Lasagna Roll Ups

  • 8 uncooked lasagna noodles
  • 1 cup freshly grated parmesan cheese
  • 1 cup ricotta cheese (whole milk recommended)
  • 3 cups mozzarella cheese, divided
  • 2 cups cooked chicken (rotisserie preferred), shredded
  • 1/2 teaspoon Italian seasoning
  • 1 (15 ounce) jar Alfredo sauce, divided
  • Salt and pepper, to taste

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and position the oven rack in the top third of the oven to ensure even cooking and perfect browning.
  2. Cook Lasagna Noodles: In a large pot, cook the lasagna noodles until al dente following the package instructions. Drain the noodles without rinsing, then lay them flat on parchment paper or foil to cool without overlapping.
  3. Prepare Baking Dish: Spray a 9×13 inch baking dish with cooking spray or grease it lightly with olive oil to prevent sticking.
  4. Mix Filling: In a bowl, combine parmesan cheese, ricotta cheese, 1 cup of mozzarella, shredded chicken, Italian seasoning, half of the Alfredo sauce, and salt and pepper. Stir well to combine all ingredients evenly.
  5. Assemble Roll Ups: Pat the noodles dry if needed. Spread an equal amount of the cheese and chicken mixture over each noodle, then carefully roll each noodle away from you and place seam side down in the prepared baking dish. Repeat for all 8 noodles.
