Description

Caramelized Onion & Feta Flatbreads are a delicious and easy-to-make appetizer or light meal, featuring sweet, deeply caramelized onions paired with tangy feta cheese and fragrant thyme on crispy flatbreads. Perfectly baked to golden perfection and optionally drizzled with honey for a touch of sweetness, this recipe offers a delightful blend of savory and sweet flavors.

Ingredients

Scale

For the Caramelized Onions

  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon balsamic vinegar

For the Flatbreads

  • 4 flatbreads (store-bought or homemade)
  • 1 cup crumbled feta cheese
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey (optional, for drizzling)

Instructions

  1. Heat the Oil and Onions: In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and sprinkle with salt. Cook while stirring occasionally for about 10 minutes until the onions start to soften.
  2. Caramelize the Onions: Add the sugar and continue cooking the onions for another 15-20 minutes, stirring frequently, until they become deeply caramelized and golden brown. If the onions begin to stick to the pan, add a splash of water to loosen them.
  3. Add Balsamic Vinegar: Stir in the balsamic vinegar and cook for an additional 2 minutes to enhance the flavor. Remove the skillet from the heat and set the caramelized onions aside.
  4. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the flatbreads.
  5. Assemble the Flatbreads: Place the flatbreads on a baking sheet. Evenly distribute the caramelized onions over each flatbread.
  6. Add Cheese and Herbs: Sprinkle the crumbled feta cheese and thyme leaves on top of the onions. Season with black pepper for added flavor.
  7. Bake the Flatbreads: Bake in the preheated oven for 10-12 minutes, or until the flatbreads are crispy and the cheese has slightly melted.
  8. Finish and Serve: Remove the flatbreads from the oven and drizzle with honey if desired to add a hint of sweetness. Slice and serve warm for best flavor.

Notes

  • Use sweet onions like Vidalia or Walla Walla for best caramelization results.
  • If you prefer a vegan version, substitute feta cheese with a plant-based cheese alternative.
  • Honey drizzle is optional but adds a lovely balance to the savory and tangy flavors.
  • Flatbreads can be store-bought or homemade, choose your preference for convenience or freshness.
  • To prevent sticking while caramelizing onions, use a non-stick skillet or add water as needed during cooking.
