Ingredients
Pasta and Sauce
- 1 pound angel hair pasta
- 1 pound roma tomatoes, diced
- 1 small shallot, minced (or ¼ red onion)
- 2 cloves garlic, minced
- 3 tablespoons chopped basil
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil (for bruschetta mixture)
- salt and pepper to taste
Chicken
- 1½ pounds chicken breasts
- ¾ teaspoon salt
- ½ teaspoon Italian seasoning
- ½ teaspoon onion powder
- ¼ teaspoon black pepper
- 2 tablespoons olive oil (for cooking chicken)
To Serve
- Balsamic glaze
- Grated Parmesan cheese
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the angel hair pasta according to package directions until al dente. Drain and return the pasta to the pot, tossing with a tablespoon of olive oil to prevent sticking.
- Prepare the Bruschetta Mixture: In a bowl, combine the diced roma tomatoes, minced shallot, minced garlic, chopped basil, balsamic vinegar, 1 tablespoon olive oil, salt, and pepper. Mix well and set aside.
- Season the Chicken: Pat the chicken breasts dry and season them evenly with salt, Italian seasoning, onion powder, and black pepper.
- Sauté the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 5-6 minutes on each side, or until browned on the edges and cooked through. Remove the chicken from the skillet and let it rest for 5 minutes before slicing into strips.
- Heat the Bruschetta Sauce: Add the prepared bruschetta mixture to the same skillet and cook over medium heat for 1-2 minutes until warmed through to develop the flavors.
- Toss Pasta with Sauce: Add the cooked angel hair pasta to the skillet with the bruschetta sauce and toss gently to combine everything evenly.
- Serve: Plate the pasta and top with sliced chicken breast. Drizzle with balsamic glaze and sprinkle generously with grated Parmesan cheese before serving.
Notes
- You can substitute cherry tomatoes if roma tomatoes are not available.
- For a spicier kick, add red pepper flakes to the bruschetta mixture.
- Make sure not to overcook the chicken to keep it tender and juicy.
- Balsamic glaze can be found at most grocery stores or made by reducing balsamic vinegar until syrupy.
- Leftovers can be stored in the refrigerator for up to 3 days.
