Ingredients
Filling:
- 4 cups fresh or frozen blueberries
- 1 tablespoon lemon juice
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
Topping:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter (cold and cubed)
- 1/2 cup whole milk
- 1/2 teaspoon vanilla extract
Optional: vanilla ice cream or whipped cream for serving
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C).
- Prepare the Filling: In a large bowl, mix blueberries, lemon juice, 1/2 cup sugar, and cornstarch. Pour into a greased 9-inch baking dish.
- Make the Topping: Combine flour, 1/2 cup sugar, baking powder, and salt. Cut in butter until crumbly. Stir in milk and vanilla.
- Assemble and Bake: Spoon topping over the blueberries. Bake for 35–40 minutes until golden and bubbly. Let cool slightly before serving.
