Ingredients
Salad:
- 2 cups cooked chicken breast, shredded or diced
- 1 cup cherry tomatoes, halved
- 4 slices bacon, cooked and crumbled
- 1 cup romaine or butter lettuce, chopped
- 1/4 cup red onion, finely diced
Dressing:
- 1/4 cup mayonnaise
- 2 tablespoons plain Greek yogurt
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- Salt and black pepper, to taste
Instructions
- In a large bowl, combine the cooked chicken, cherry tomatoes, crumbled bacon, chopped lettuce, and red onion.
- In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the salad and toss gently until everything is evenly coated.
- Chill for 15–30 minutes before serving for best flavor. Serve on its own, in lettuce wraps, or in sandwiches.
