For the Banana Bread:

  • 3 ripe bananas (mashed)
  • ½ cup unsalted butter (softened)
  • ¾ cup brown sugar
  • 2 large eggs

  • ½ teaspoon cinnamon

For the French Toast:

  • 6 slices of banana bread (cut thick)
  • 3 large eggs
  • ½ cup whole milk
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • pinch of salt
  • butter or oil for cooking

For the Bananas Foster Topping:

  • 3 tablespoons unsalted butter
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 ripe bananas (sliced)
  • 2 tablespoons dark rum (optional)
  • 1 teaspoon vanilla extract
  • pinch of salt


Instructions

  1. Make the Banana Bread: Preheat oven to 350°F (175°C). In a large mixing bowl, cream together the butter and brown sugar. Add the eggs and vanilla, then stir in the mashed bananas. In another bowl, whisk together the flour, baking soda, cinnamon, and salt. Add the dry ingredients to the wet and mix until just combined. Pour into a greased 9×5-inch loaf pan and bake for 50–60 minutes, or until a toothpick comes out clean. Let cool completely before slicing for French toast.
  2. Make the French Toast: In a shallow dish, whisk together the eggs, milk, cream, vanilla, cinnamon, and salt. Heat a skillet or griddle over medium heat and add butter or oil. Dip each banana bread slice into the egg mixture, letting it soak for a few seconds per side. Cook the slices 2–3 minutes per side or until golden brown and crisp. Keep warm while you make the topping.
  3. Make the Bananas Foster Topping: In a skillet, melt butter over medium heat. Add brown sugar and cinnamon, stirring until the sugar melts. Stir in sliced bananas and cook for 1–2 minutes until softened. Carefully add rum (if using), and let it cook down for 30 seconds. Stir in vanilla and a pinch of salt.

Notes

  • You can make the banana bread a day in advance for easier slicing.
  • Omit the rum for a kid-friendly version.
