  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 (10 oz) packages frozen chopped spinach, thawed and well-drained

Additional Ingredients:

  • 4 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup plain breadcrumbs (optional, for topping)
  • Nonstick cooking spray or butter (for greasing)

Instructions

  1. Preheat the Oven: Preheat oven to 375°F and lightly grease a 9×9-inch or similar-size baking dish.
  2. Sauté Onion and Garlic: In a skillet over medium heat, warm olive oil and sauté the chopped onion for 3–4 minutes until softened. Add the garlic and cook for 1 minute more.
  3. Prepare Spinach Mixture: In a large bowl, combine the drained spinach, sautéed onion and garlic, eggs, cottage cheese, mozzarella, Parmesan, salt, pepper, and nutmeg. Mix until well incorporated.
  4. Bake the Casserole: Transfer the mixture to the prepared baking dish, smooth the top, and sprinkle with breadcrumbs if desired. Bake for 35–40 minutes until set and golden on top.
  5. Serve: Let the casserole cool for 5–10 minutes before slicing and serving.

Notes

  • You can use fresh spinach—just sauté it until wilted and drain well.
