Bell Pepper Rings:

  • 2 large bell peppers (any color), cut into 1/2-inch thick rings

Eggs:

  • 4 large eggs

Seasonings:

  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional)

Cheese:

  • 1/4 cup shredded cheese (cheddar, mozzarella, or feta)

Garnish:

  • Chopped fresh parsley or chives for garnish


Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare peppers: Slice bell peppers into rings, remove seeds and membranes. Brush both sides with olive oil and place on baking sheet.
  3. Add eggs: Crack one egg into each pepper ring. Season with salt, pepper, garlic powder, and paprika. Bake for 12–15 minutes until eggs are set.
  4. Add cheese: Sprinkle shredded cheese over eggs during the last 2 minutes of baking. Garnish with parsley or chives before serving.

Notes

  • For firmer yolks, bake closer to 15 minutes.
