Ingredients
Bell Pepper Rings:
- 2 large bell peppers (any color), cut into 1/2-inch thick rings
Eggs:
- 4 large eggs
Seasonings:
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika (optional)
Cheese:
- 1/4 cup shredded cheese (cheddar, mozzarella, or feta)
Garnish:
- Chopped fresh parsley or chives for garnish
Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare peppers: Slice bell peppers into rings, remove seeds and membranes. Brush both sides with olive oil and place on baking sheet.
- Add eggs: Crack one egg into each pepper ring. Season with salt, pepper, garlic powder, and paprika. Bake for 12–15 minutes until eggs are set.
- Add cheese: Sprinkle shredded cheese over eggs during the last 2 minutes of baking. Garnish with parsley or chives before serving.
Notes
- For firmer yolks, bake closer to 15 minutes.
