Ingredients
Soup Base
- 1 Tablespoon olive oil
- 1 large yellow onion, chopped
- 2 large red bell peppers, chopped
- 1 cup carrots, shredded
- 1 Tablespoon minced garlic
- 1 Tablespoon curry powder
- 1/2 teaspoon cayenne pepper
- Kosher salt, to taste
- 3 cups chicken broth
- 1/2 medium lime, juiced
- 2 cups rotisserie chicken, shredded
Noodles and Garnish
- 16 ounces rice noodles
- 2 Tablespoons diced green onion
- 1/4 cup fresh cilantro, chopped
Instructions
- Combine ingredients: Add olive oil, chopped onion, red bell peppers, shredded carrots, minced garlic, curry powder, cayenne pepper, kosher salt, chicken broth, lime juice, and shredded rotisserie chicken into a crock pot or slow cooker. Stir to combine all ingredients evenly.
- Slow cook the soup: Cook the mixture on high for 3-4 hours or on low for 6-8 hours, allowing the flavors to blend and the vegetables to become tender while the chicken infuses the broth.
- Prepare rice noodles: While the soup is nearing completion, prepare the rice noodles according to the package instructions, usually by soaking or briefly boiling until tender.
- Add noodles to soup: Once the noodles are prepared, add them directly to the crock pot with the cooked soup base.
- Warm noodles in soup: Cook the soup with noodles on high for an additional 30 minutes to allow the noodles to absorb some broth and heat through evenly.
- Garnish and serve: Just before serving, garnish the soup with freshly chopped cilantro and diced green onions for a burst of fresh herbaceous flavor.
Notes
- Adjust cayenne pepper according to your spice preference for milder or spicier soup.
- Rotisserie chicken is a convenient shortcut, but cooked shredded chicken can be used as well.
- Rice noodles are best added at the end to prevent overcooking and becoming mushy.
- Garnishes like fresh cilantro and green onion enhance the fresh flavors and add color.
- For a gluten-free version, ensure the chicken broth and curry powder are labeled gluten-free.
