  • ¼ cup granulated sugar
  • ½ cup unsalted butter (melted)

Cheesecake Layer:

  • 2 (8 oz) packages cream cheese (softened)
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Apple Filling:

  • 2 cups peeled and finely diced apples (such as Granny Smith)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup light brown sugar

Streusel Topping:

  • ½ cup all-purpose flour
  • ¼ cup rolled oats
  • ¼ cup packed brown sugar
  • ¼ cup cold unsalted butter (cubed)


Instructions

  1. Graham Cracker Crust: Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper. Mix graham cracker crumbs, ¼ cup sugar, and melted butter. Press into pan and bake for 8–10 minutes. Cool.
  2. Cheesecake Layer: Beat cream cheese until smooth. Add ½ cup sugar, vanilla, and eggs. Pour over crust.
  3. Apple Filling: Toss apples with cinnamon, nutmeg, and ¼ cup brown sugar. Spread over cheesecake layer.
  4. Streusel Topping: Combine flour, oats, brown sugar, and cold butter until crumbly. Sprinkle over apples.
  5. Bake for 35–40 minutes. Cool, then chill for 2 hours before slicing into bars.
