Ingredients
Pie Dough
- 1 package refrigerated pie dough
- 1 egg, beaten (for egg wash)
Blackberry Filling
- 12 oz fresh blackberries
- ¼ cup sugar
- 3 tbsp all-purpose flour
- 2 tbsp lemon juice
- ½ tsp cinnamon
Glaze
- 1 cup powdered sugar
- ½ lemon, juiced
Instructions
- Preheat the Air Fryer: Wipe the air fryer clean and preheat according to your machine’s instructions, typically at 350°F (175°C), to ensure even and efficient cooking.
- Prepare the Blackberry Filling: In a mixing bowl, gently combine the fresh blackberries, sugar, all-purpose flour, lemon juice, and cinnamon. The flour helps thicken the filling as it cooks.
- Assemble the Hand Pies: Roll out the refrigerated pie dough and cut it into 6 equal-sized circles or squares. Spoon a portion of the blackberry filling onto half of each dough piece, leaving a border. Fold the dough over the filling to create hand pies and press the edges firmly with a fork to seal. Brush each hand pie with the beaten egg to give a golden finish when cooked.
- Air Fry the Hand Pies: Place the hand pies in the air fryer basket in a single layer, ensuring they don’t touch. Cook at 350°F (175°C) for about 8 minutes or until the dough is golden brown and crisp.
- Prepare the Lemon Glaze: While the pies are cooking, mix the powdered sugar with fresh lemon juice from half a lemon to create a smooth glaze.
- Glaze and Serve: Remove the hand pies from the air fryer and allow them to cool for a few minutes. Drizzle the lemon glaze over the top for added sweetness and tang. Serve warm or at room temperature.
Notes
- Ensure the pie dough is well chilled before cutting and assembling for easier handling.
- If blackberries are too tart, adjust sugar to taste.
- Do not overfill the pies to prevent leaking during cooking.
- Cooking times may vary depending on your air fryer model; check doneness to avoid overcooking.
- The glaze can be omitted if preferred, or substitute with a dusting of powdered sugar.
